COOK TIME : 30-40 minutes
SERVES : 10 people
INGREDIENTS
3 apples (peeled and sliced)
2 tablespoons brown sugar
1 teaspoon cinnamon
1 tablespoon unsalted butter
125 grams unsalted butter (softened)
125 grams caster sugar
2 large eggs
250 grams gluten-free self raising flour
1/2 cup milk
1 teaspoon salt
1 teaspoon vanilla extract
2 tablespoons almond meal
1 tablespoon brown sugar

METHOD
Preheat oven to 180° Celsius.
Line round cake tin. Set aside.
In a saucepan, combine apple slices, brown sugar, cinnamon and unsalted butter.
Cook until sugar begins to caramelise. Take off heat and set aside.
In a large mixing bowl, cream together unsalted butter and caster sugar with a hand mixer.
Add eggs and beat until just combined.
Add half of the self-raising flour. Beat until just combined.
Add milk, salt and vanilla extract. Beat until just combined.
Add the remainder of the flour and beat until completely incorporated.
Stir in caramelised apple mixture.
Pour cake batter into prepared tin.
In a small bowl, combine almond meal and brown sugar.
Pour mixture evenly over cake batter.
Place cake tin in oven and bake for 30-40 minutes, or until a skewer inserted in the centre comes out clean.
Remove from oven and allow to cool completely.
Great served with cream or ice cream.
