These gluten-free millionaire's shortbread are the perfect sweet treat for any occasion....layers of buttery shortbread, gooey caramel and silky chocolate!
PREP TIME : 20 minutes (2 hour cool time)
COOK TIME : 20 minutes
SERVES : 21 slices
INGREDIENTS:
Shortbread:
200 grams unsalted butter (softened)
100 grams caster sugar
333 grams gluten-free plain flour
Caramel:
1 x 395 gram tin condensed milk
60 grams caster sugar
120 grams unsalted butter
2 tablespoons golden syrup
270 grams milk or dark chocolate
METHOD:
Preheat oven to 180° Celsius.
Grease and line a baking tray. Set aside.
Shortbread: In a large mixing bowl, cream butter and caster sugar using a hand mixer. Beat until light and fluffy.
Add in plain flour gradually and mix. When mixture begins to thicken, use hands to thoroughly combine. Roll into a smooth ball of dough.
Press dough into lined baking tray. Use hands to flatten mixture into an even layer.
Prick dough all over with a fork.
Place in oven. Bake for 20 minutes, or until slightly golden.
Remove from oven and allow to cool completely.
Caramel: In a saucepan, combine condensed milk, butter, caster sugar and golden syrup.
Cook mixture on a low heat, stirring constantly until a caramel colour develops. This may take some time; do not let it burn.
Remove caramel from the heat and allow to cool for a few minutes.
Pour caramel over completely cooled shortbread. Ensure it is spread evenly.
Place baking tray in refrigerator and cool for an hour.
After an hour, melt chocolate and pour over cooled caramel layer.
Place back in refrigerator for another hour.
Once cooled, millionaire's shortbread can be cut into squares (use a knife heated with boiling water). Store in refrigerator.
