HOMEMADE Gluten-Free Muesli

A super easy, and nutritious, homemade gluten-free puffed rice muesli. The perfect light breakfast option! Ideal served with your choice of milk or yoghurt, and fresh fruit.


PREP TIME : 10 minutes

COOK TIME : 20-25 minutes

 

INGREDIENTS

  • 1 bag (170 grams) wholegrain brown puffed rice

  • 1 cup pepitas

  • 1 cup walnuts (chopped roughly)

  • 1 cup slivered almonds

  • 1/2 cup sunflower seeds

  • 1/2 coconut flakes

  • 1/4 cup black chia seeds

  • 1 tablespoon cinnamon

  • 3/4 cup coconut oil

  • 3 tablespoons honey

 

METHOD

  1. Preheat oven to 150° Celsius.

  2. Line two baking trays with baking paper. Set aside.

  3. In a large bowl, combine brown puffed rice, pepitas, walnuts, slivered almonds, sunflower seeds, coconut flakes, chia seeds and cinnamon.

  4. Spread dry mixture evenly onto prepared trays.

  5. Over a low heat, melt together coconut oil and honey until thin and runny.

  6. Gradually pour warmed liquid over dry ingredients. Ensure dry ingredients are evenly coated.

  7. Place trays in oven and bake for approximately 20-25 minutes, or until golden brown. To avoid muesli burning, it should be turned over every 8-10 minutes.

  8. Remove from oven, and allow to cool completely. The muesli will become crispy as it cools.

  9. Store in an airtight container.

  10. Enjoy served with your choice of milk or yoghurt, and fresh fruit.
