A super easy, one-bowl recipe...this gluten-free banana bread is the perfect morning or afternoon snack. It always goes down a treat in my house!
PREP TIME : 10 minutes
COOK TIME : 35-40 minutes
SERVES : 10 people
INGREDIENTS
2 cups gluten-free plain flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup brown sugar (lightly packed)
3 bananas (very ripe)
2 large eggs
1/2 cup oil, or butter (melted)
1/2 cup chocolate chips
METHOD
Preheat oven to 180° Celsius.
Grease and line a loaf tin. Set aside.
In a large bowl, mash the ripe bananas using a fork.
Add brown sugar, oil/butter and eggs. Mix until just combined.
Add flour, baking powder, baking soda and salt. Mix until just combined.
Stir through chocolate chips. Be careful not to over mix.
Pour batter into the prepared tin; place in the preheated oven.
Bake for 35-40 minutes, or until toothpick inserted in the centre comes out clean.
Once cooked, remove from oven and allow to cool completely.
