The most epic triple chocolate chips cookies - perfect for special occasions, or as a day-to-day sweet treat. They never fail to disappoint!
PREP TIME : 10 minutes (+1 hour refrigeration)
COOK TIME : 18 minutes
SERVES : 20 cookies
INGREDIENTS
125 grams unsalted butter (softened)
1/2 cup firmly packed brown sugar
1 teaspoon vanilla extract
1 egg
1 1/4 cups gluten-free plain flour
2 tablespoons cocoa powder
1/2 teaspoon baking soda
1 teaspoon xanthin gum
1/4 cup white chocolate chips
1/4 cup milk chocolate chips
1/4 cup dark chocolate chips
METHOD
Preheat oven to 180° Celsius.
Grease, and line, two baking trays. Set aside.
In a medium bowl, cream together unsalted butter, brown sugar and vanilla extract with an electric mixer.
Add egg; beat until just combined.
In two batches, stir in plain flour, cocoa powder, baking soda and xanthin gum.
Once combined, add chocolate chips; stir thoroughly.
Cover cookie dough; refrigerate for one hour.
Using wet hands, roll tablespoons of mixture into balls. Place 5cm apart on baking trays; flatten balls with a fork.
Bake cookies for 18 minutes, or until golden. Allow to cool on trays.
