INGREDIENTS
1 cup brown rice (cooked)
1 cup quinoa (cooked)
1 brown onion (diced)
1 red capsicum (diced)
1 medium carrot (diced)
1/4 cup peas (frozen or fresh)
1 teaspoon oil (any oil of your preference)
2 eggs (beaten)
1 tablespoon gluten-free soy sauce
METHOD
Place pan over a medium heat and add oil. Allow to heat.
Add brown onion, red capsicum, carrot, peas and bacon. Sauté until vegetables have softened.
Add brown rice and quinoa. Stir thoroughly until combined.
Add eggs and soy sauce. Stir constantly to coat rice/vegetable mix, and cook egg evenly.
Once egg is cooked, turn off heat. Best eaten whilst hot.
